Immune Boosting Antiviral Tomato Ginger Soup

Ginger is a delicious ingredient to simply enjoy as tea or to add to your dishes for a stronger immune system.  Studies suggest that fresh ginger stimulates the secretion of IFN-β to combat viral infections.

Immune Boosting Antiviral Tomato Ginger Soup


Ingredients:

  • 6 organic tomatoes, washed and cut into bite-sized pieces

  • 8 cups astragalus chicken herbal broth

  • 3 scallions with roots removed, sliced

  • 2 inches of fresh ginger root, grated

  • 1 garlic clove, grated

  • 1 tbsp olive oil

  • Salt and pepper to taste 

  • Optional: Add your choice of protein such as 2 cups of shredded chicken or 3 beaten eggs

Steps:

  1. Heat 1 tbsp of olive oil into a soup pot on high heat

  2. Add ginger, scallions, garlic and stir in the pot until aromatic

  3. Add cut tomatoes and continue stirring for 2 minutes

  4. Add salt and pepper and broth, bring to a boil

  5. Cover and simmer for 20 minutes

  6. Add your choice of protein and bring to a rapid boil 

  7. Serve hot
