Food as Medicine: Mung Beans

The mung bean has been documented to alleviate high blood sugar, high cholesterol, and high blood pressure. Mung beans have also been shown to prevent cancer while protecting liver function and regulating the immune system. Chinese medicine has used mung beans to clear away inflammation, reduce acne and rashes.

Detoxifying Mung Bean Soup


Ingredients:

  • 1/2 cup of organic mung beans, washed and drained

  • 1/2 cup of dried lily bulb, washed and drained

  • Optional: 1/4 cup of quinoa or rice, washed and drained

  • 16 cups of water


Directions:

  • Add all ingredients into a large stock pot

  • Bring to a boil

  • Simmer covered for 1 hour

  • Serve warm or at room temperature
