
Winter melon is a delicious vegetable that is low in calories and carbs. It is rich with fiber and antioxidants to help protect your body from disease. Though the name includes "winter", it is best to eat this in the summer to help cool down the body. Winter melon is easy on the digestive system and soaks up any flavors you cook with it.
Simple Winter Melon Soup
Ingredients:
8 cups of chicken broth, use our herbal chicken broth recipe from our blog
2 pounds of winter melon, rind and seeds removed, cut into bite-sized pieces
1 cup of diced prosciutto, Jinhua ham, or Smithfield ham
3 thick slices of fresh ginger, peeled
3 scallions, chopped
salt and white pepper to taste
Steps:
Add all ingredients, except for scallions, into a pot and simmer for 20 minutes
Top with scallions and serve hot
