Food as Medicine: Shiitake Mushroom Soup

Shiitake mushrooms are known for their medicinal qualities. Studies conducted with shiitake reveal immunostimulatory and antiviral properties. If you buy the whole mushroom, the stems can be removed and tossed into an herbal chicken broth for more flavor. If you cannot find fresh shiitake mushrooms, feel free to use re-hydrated mushrooms. Garlic, with antimicrobial properties, adds a delicious flavor to this simple soup.
Shiitake Mushroom Soup
Ingredients:
~1 lb fresh organic shiitake mushroom caps, sliced
3-4 garlic cloves, minced
2 tbs olive oil
3 sprigs of fresh thyme
8-12 cups of herbal chicken broth
sea salt and pepper to taste
Optional: a few cups of leafy greens, cooked quinoa or rice noodles
Directions:
In a large stockpot, heat olive oil.
Add sliced shiitake and allow the mushrooms to brown lightly as you stir
Add garlic and fresh thyme, saute until aromatic
Add herbal chicken broth and bring to a boil
Simmer for 20 minutes
Add salt and pepper to taste
Remove thyme sprigs
Add any optional ingredients and enjoy hot
