Food as Medicine: Bamboo Shoots

Bamboo shoots, the edible sprouts of many bamboo species, offer a significant nutritional profile characterized by high fiber content and essential micronutrients. Incorporating these shoots into a balanced diet can provide several physiological benefits. These benefits include but are not limited to:
Cardiovascular Support: Bamboo shoots are a concentrated source of potassium, a mineral essential for maintaining systemic blood pressure and supporting heart function.

It is vital to note that raw bamboo shoots contain cyanogenic glycosides. To ensure safety and neutralize these compounds, if you are planning on utilizing fresh shoots they must be boiled in salted water for a minimum of 20 minutes prior to consumption. Ingredients
½ lb pork, thinly sliced
1 tablespoon neutral cooking oil
8 oz bamboo shoots, sliced into thin strips
If using canned bamboo shoots we recommend rinsing thoroughly before adding them to your stir fry!
1 - 2 Scallions, chopped
Salt & white pepper to taste
Optional: shiitake mushrooms or bok choy
Pork Marinade:
1 tablespoon soy sauce
2 teaspoon cornstarch
2 teaspoon vegetable oil
Directions
Combine the ingredients for the marinade and add in the thinly sliced pork.
Let sit for 15 - 20 minutes
Heat a pan and add neutral cooking oil
Stir fry the pork, about 2 - 3 minutes. Remove from the pan.
Add rinsed and thinly sliced bamboo shoots and scallions to the pan and stir fry.
(If you are adding additional vegetables, like shiitake or bok choy, add them here!)
Return pork to the pan with the vegetables.
Stir fry for an additional 3 - 5 minutes, or until the pork is cooked through.
Season to taste, and enjoy!
