Food as Medicine: Chives

Chives are a great source of antioxidants and nutrients. Studies have shown that chives have anticancer properties, can help with sleep and mood functions, prevent macular degeneration in the eye, and are packed with both vitamin K and folate.


Try stir frying some eggs and chives together to create a simple and delicious dish that will surely become a staple in your household.

Chinese Chives and Eggs Stir Fry

Ingredients:

  • 5 large eggs

  • 1/2 teaspoon salt

  • 1/4 teaspoon ground white pepper

  • 1/4 teaspoon toasted sesame oil

  • 4 cups Chinese chives/garlic chives chopped into 1 inch pieces

  • 3 tablespoons avocado or any high heat oil


Directions:

  1. Crack the eggs into a large bowl and beat thoroughly with salt, white pepper and sesame oil

  2. Heat a wok on high heat. When wok is hot, add avocado oil and swirl your wok to coat. The oil should be hot but not smoking when you add the egg mixture

  3. Pour egg mixture into the wok and stir fry into bite sized pieces

  4. When eggs begin to set, add the chopped chives and continue to stir fry until chives are wilted

  5. Add more salt to taste

  6. Serve hot
