Food as Medicine: Cucumber Egg Drop Soup

Cucumbers are a refreshing addition to any diet, known for their high water content and low calorie count. Originating in India over 3,000 years ago, cucumbers were among the earliest cultivated vegetables, prized for their hydrating qualities. Introduced to China by way of the Silk Road, they can be found in a variety of Chinese dishes.


Cucumbers contain important nutrients like Vitamin K, as well as antioxidants such as flavonoids and tannins, which help fight free radicals and reduce inflammation. Because of their cooling properties, incorporating cucumbers into your regular diet is a great way to stay refreshed and nourished, especially during warmer months.


In our delicious egg drop soup recipe, the addition of cucumber to the egg makes for an easy and nutritious meal that can be prepared all year round.

Cucumber Egg Drop Soup


Ingredients:

  • 5 cups of chicken broth (we recommend a bone broth)

  • 3 large organic eggs

  • Thinly sliced cucumbers (we recommend seedless cucumbers)

  • Salt and white pepper to taste

  • 2 Tablespoons of finely chopped scallions

  • Optional: Roasted sesame oil


Directions:

  1. In a large pot, bring chicken broth to a boil.

  2. In a small separate bowl, use a fork or whisk to scramble the eggs.

  3. Once the broth is boiling, add the thinly sliced cucumber.

  4. Slowly swirl and drizzle the egg mixture into the boiling broth, stirring constantly in one direction until eggs are cooked through.

  5. Add salt and ground white pepper to taste.

  6. If desired, add in a teaspoon of sesame oil and garnish with finely chopped scallions.

  7. Serve hot and enjoy!
