Ginger

Ginger is a delicious ingredient to simply enjoy as tea or to add to your dishes for a stronger immune system. Studies suggest that fresh ginger stimulates the secretion of IFN-β to combat viral infections.
Immune Boosting Antiviral Tomato Ginger Soup
Ingredients:
6 organic tomatoes, washed and cut into bite-sized pieces
8 cups astragalus chicken herbal broth
3 scallions with roots removed, sliced
2 inches of fresh ginger root, grated
1 garlic clove, grated
1 tbsp olive oil
Salt and pepper to taste
Optional: Add your choice of protein such as 2 cups of shredded chicken or 3 beaten eggs
Steps:
Heat 1 tbsp of olive oil into a soup pot on high heat
Add ginger, scallions, garlic and stir in the pot until aromatic
Add cut tomatoes and continue stirring for 2 minutes
Add salt and pepper and broth, bring to a boil
Cover and simmer for 20 minutes
Add your choice of protein and bring to a rapid boil
Serve hot
